Nutty Cereal Cookies
1 c. whole wheat flour
½ c. flax seed meal
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1 c. unsalted butter, softened
1c. unsweetened applesauce
1 c. packed brown sugar
2 eggs
1 tsp vanilla
2 c. wheat cereal flakes (like Uncle Sam's)
2 c. rolled oats (not quick cook)
1 1/2 c. chopped walnuts, toasted
1 1/2 c. dried cranberries, golden raisins, dried cherries, or dried blueberries
Pre-heat oven to 325˚F. In a medium bowl combine flour, flax seed meal, baking powder, baking soda, & cinnamon: set aside.
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add applesauce & brown sugar. Beat until combined, scraping sides of bowl occasionally. Beat in eggs & vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. With a wooden spoon, stir in any remaining flour mixture. Stir in wheat cereal, oats, walnuts & dried fruit.
Drop by well-rounded teaspoonfuls 2 inches apart onto cookie sheets lined with parchment paper. Bake 12-14 minutes or until golden & set.
Cool on cookie sheets 2 minutes. Transfer to cooling rack to cool completely.
Makes about 5 dozen.
Don't fear whole wheat. Crunchy feels great! With this recipe, you'll be getting your whole grains, omega-3 from the flax & antioxidants from the raisins/ berries. How can you resist??
